Fried rice - April version

Since I'm going away in 10 days (off to Holland again, so happy :D), I try to use what I have and not buy so much new stuff, so fried rice works perfectly! I would like to just open my fridge and just make up a recipe with what I have.  Fried rice works as a base for that.


I normally do this for one-two people, if you are cooking for more, just add more rice and more eggs. This is for one person.

some left-over rice (as much as you want to eat)
oil
a teaspoon of sambal oelek
the green part from 3-4 spring onions (I used the white part yesterday, but you can also use whole spring onion too)
a piece of cucumber
a cup of peanuts
maybe a teaspoon of ketjap manis, to taste
1 egg
a pinch of salt

Add the oil to a hot pan. Put the sambal oelek and quickly fry it. Add the rice, fry it for awhile, so it gets warm. Add the spring onions, cucumber and peanuts (I don't rinse my peanuts, I just use the party peanuts, then I don't need to add so much salt) and let it fry for a bit. Add the ketjap manis, stir around then add the egg. Stir until the egg is cooked. Add a little bit of salt, if you need it. Serve with sriracha sauce if you need extra spiciness (my boyfriend doesn't like spicy food, but I do, so I'm really happy I discovered sriracha sauce, then I can make a mild base and then just add the sauce when I eat -both stay happy ;)
